I don't recommend using Entourage at all. You're expecting eight year old software to work on a new Apple OS. If you can get it to work, I guess that's good, but you really should upgrade to a newer version of Office. Outlook 2011 works good on El Capitan, and so does Outlook 2016. Honestly, I think that Entourage is crap.
It has always been crap. When Microsoft released Outlook 2011 for Mac, it was a decent improvement, but it still had all of the problems that Entourage did, but it was a little better.
Outlook 2016 seems to be an even bigger improvement. In the end, Outlook on Mac is seriously hobbled compared to the Windows version. I prefer Apple's built-in Mail, Calendar, and Contacts apps because they are mostly problem free. If there's an issue with Apple's Mail app, I don't lose my email data since I can go locate the email data and manually get out it. That's not possible with Entourage or Outlook since Microsoft believes that packing everything into a data file is a good thing.
It introduces a huge opportunity for data loss. If your account type is IMAP, or Exchange, just delete the data files and start fresh.
Better yet, take this opportunity to ditch Entourage. In my case, I was using Entourage%uFEFF 2008 web services edition on an exchange account. I upgraded from Mac OS 10.8.5 to 10.11 and the program does seem to at least open, but it immediately hangs up and goes into the 'not responding' mode and then you simply have to force quit. Thus there is no way to keep using it without some type of 'fix'. Although I would very much like to keep using Entourage as it does all that I need and I have been using it since it came out, it would seem at this point maybe us former users are now being forced into a different client, such as Outlook or Mail. I would have stayed with OS 10.8 but now Apple has abandoned providing security patches for that OS, and you are told that puts you in a very precarious position if you stay in 10.8.
One reply suggests first installing Office/Outlook 2011, importing everything, and then upgrade to Outlook 2016 and import everything again. Basically abandon using Entourage altogether and live with Outlook.

Despite all the argy bargy about old software etc., I am really in tune with his wish to stay with Entourage.
Whatever maybe going on 'under the hood', Entourage provides the most practical and workable user interface and appearance and I for one have tried all the other newer ones but none can do for me what Entourage does. No need to describe what that is - more important to say to David that I am running Entourage 2008 with El Capitan on an iMac Retina 27 inch with no problems except for one glitch. That is that the first time you open Entourage and send something it warns you the Certificate is invalid. There's a reason why this happens which is too complex for me to explain here (but you can google it), but the nerds have told me to ignore that message and just 'OK' the warning.
From then on, as long as Entourage remains open you no longer get the warning and everything works fine just at it did all these years. One other thing you have to do is ignore the servers that Apple publishes for your settings - you still have to specify mail.mac.com for receiving mail and smtp.mac.com for sending mail (port 993 for receiving and port 587 for sending). There are a number of serious disadvantages regarding how templates are handled by Office 2016. It drove me so mad I deleted Office 2016 and reverted back to Office 2011 for Excel, PowerPoint and Word, and they work absolutely fine with El Capitan. Things aren't always better from the user's point of view just because they are newer. There might be technical reasons behind the interface that justify the change, but I don't play there. I play on the surface - i.e.
I use Excel et al to write/produce doc/make presentations etc and couldn't give a damn what nerdy improvements i am missing out on below the surface. The surface is the workplace and you need software that is user friendly and uncomplicated. Office 2011 is good enough for that and Entourage 2008 is best for my emails. Good luck to David - it IS possible to make Entourage work. Step 2: Open Database Utility (Start Entourage while holding the OPTION key on the keyboard) Step 3: Select the database that you want to rebuild (Database Utility window provides the option to select the database) Step 4: Select Rebuild Database option and click on continue option to start the process of rebuilding. Step 5: After completion of the rebuild process, a message 'Your database was successfully rebuilt.' Will appear on the screen Step 6: Click Done. Step 7: Click Quit. Further to what I wrote on May 29th 2016, Entourage is still working well on El Capitan, and I have had fewer crashes than I ever used to. However, the new big difference is that Apple's mac.com servers are now designed to block Entourage so it is impossible to get the full range of services if that is your email server.
However, that is only Apple. There is no trouble whatsoever using Entourage with, for example, gmail.com. The Entourage user interface is just as functional as ever, and certainly much less clumsy than either gmail or Apple Mail in the way you can set mailboxes etc. So how I make things work while retaining my mac.com email address and ID, is to have everything that comes to my mac.com address automatically forwarded to gmail which in turn forwards a copy to Entourage. Then I do what I want with mails in Entourage. Sounds clumsy, but I have in any case always kept a copy of all my emails as a single stream on gmail just in case of server failures or desktop losses, long before Apple servers made it difficult to work with Entourage.
Nothing has changed now, except that the stream of emails is now on the mac.com servers and gmail rather than mac.com which contains the complete record of my emails and the mailboxes and sub-mailboxes. Gmail is the server that does all the sending of my mails, but it is programmed to show mac.com as my sender email address to all recipients. Why go to all this trouble you might ask.

Well, I have tried every available new email client (e.g. Outlook, Airmail, Polymail, Thunderbird, and even Mac Os Mail) but none of them delivers the combination of assets and usability that I happen to require, in a visual format that works for me.
Also, I am an avid user of SpamSieve but Apple has thrown some problems up in the later versions of Mail that do not allow it to work properly with SpamSieve. And I use a colour labelling app that enables me to structure, colour and file Entourage items as I wish. The other programmes do not do as well (or at all in Mail's case). I really want Mail to work for me, but it doesn't.

Similarly, in terms of user interface, the calendar in Entourage is miles better than Apple's Calendar. I have forced myself to migrate to Apple's Calendar because of the need for continuity with my iPad, but I find it a pale comparison to Entourage's calendar in many ways, particularly for labelling. Obviously everyone's needs are different, but Entourage happens to address mine best. Its weaknesses are probably many, but not visible at the level of the way I want to interface with it. As far as I am concerned, its worst problems are two-fold: Microsoft won't update it or make Outlook work like Entourage, and Apple won't accommodate it or work around it, security-wise.
